Spring Mix Summer Salad
Yields 4 servings
1 (5 oz) package spring mix salad greens
1 pound of medium shrimp
1/2 cup of thinly sliced red onions
1 cup toasted sliced almonds
1 can (11 oz) of mandarin oranges (drained)
1 cup fresh sliced strawberries
1(8 oz) bottle of red wine vinaigrette dressing
2 tablespoons of olive oil (for toasting almonds)
1/2 cup butter (for browning shrimp)
Brown the shrimp in butter and set aside. Toast the almonds and cut up the strawberries. Thinly slice the onions, then add shrimp and dressing. Mix together and cover. Refrigerate this mixture for at least 2 hours and preferably overnight.
To prepare the salad for serving, plate the salad greens and add the fruit. Next, using a large serving spoon, add shrimp/onion/dressing mixture. Add almonds and enjoy.
