RALEIGH, N.C. -

The Food Truck business has become pretty popular here in The Triangle.

So in our latest "Phil Fills In," Phil Sanchez spent some time with one of the more popular food trucks in the area, American Meltdown.

"Today we're making grilled cheese sandwiches, you're gonna jump on board, you'll build the sandwiches, hand them to the grill cook and you'll hand them out to the audience," owner Paul Inserra said.

But before the big crowds arrived, Phil had to learn the ropes and the secrets behind the popular sandwiches.

They use different types of cheeses, meats, veggies and bread and try to keep it as local as possible. From Muenster, American and Manchego to bacon, beef and pork shoulder. All of it making up sandwiches with names like "The Dirty South," "Beer and Bacon" and "French Monster."

A little while after learning the ins and outs of the truck the first customer arrived, it was on.

As the crowd grew so did the pressure.

"What did you want again?" Phil often asked.

The orders came in one after another.

When it was all over, Phil got a positive review.

"You did a good job," Inserra said.
